“Bianco Experience”

Bianco Bar Dining is best described as a first class venue embracing a casually formal atmosphere in Brighton Le Sands. The Venue offers a private dining area, a social lounge area and also a fully stocked cocktail beer and wine bar with indoor and alfresco seating.  Bianco has uninterrupted water views overlooking Botany Bay. Once again Bianco is proud to display its Italian heritage, boasting of true Italian cuisine being prepared from our  head chef Luca Boccacci and his italian team.

The menu is carefully designed around using the freshest and most readily available produce from Sydney Markets. The Bianco experience also offers complementary parking under the Novotel for all guests.

Cocktails are a specialty for the qualified bar staff also offering a unique wine list of select Australian and imported wines served by the glass, carafe or the bottle.

 

Executive Chef Luca Boccacci

Luca Boccacci was born in Rome. His career in the hospitality industry started over 15 years ago and the passion he has for travelling led him to live in France for 3 years, work all around north and south Europe, overseas, Caraibi and Mexico as well.

He started his career working as a waiter and bartender until he attended the “Gambero Rosso” professional course, one of the most prestigious cooking classes and recognised as the most important restaurant guide in Italy. He had the chance to meet some important Italian chefs rewarded by Michelin like Chef Igles Corelli (2 Michelin stars), owner of the restaurant “La locanda della Tamerice” who transmitted to him his philosophy about “Il gusto in bocca!” and the respect for the food, Chef Grazia Soncini  (1 Michelin star) from “La capanna” restaurant, Gabriele Bonci who taught him the art of baking bread and pizza, along with many others all around Tuscany and Lazio. Those chefs have taught him how to work with food to achieve maximum results and thanks to G. Soncini for all her techniques in processing fresh fish.

All this led him to this beautiful country Australia.  His first experience in Australia was at Dolton House, where he taught a cooking class on how to make fresh pasta and bread, then he arrived in Brighton le Sands where  he met John Panebianco. The Bianco room offers its customers an unforgettable experience tasting dishes of traditional Italian cuisine.
